Shopping Cart

I've only made one resolution this year, and that is to plan and execute a trip to the United Kingdom. That is the only thing I am determinedly resolved to do.

But, I do have a few other more flexible goals to do throughout the year. One of my Christmas gifts this year was a package of spices and seasonings sent to me by my mentor Becky. Included as well, were several recipes. Yesterday as I was planning my pre-pay day shopping lists I made sure to include some of the extra ingredients I will need. My goal this year is two new recipes a month.This will be very exciting since my diet has become a staple regime of old recipes. Lentil soup, baked potatoes, roast broccoli, and black bean burgers.

Typically I go grocery shopping every two weeks. The first four items I have on every shopping list are: Eggs, bread, soy milk and black beans.

I still don't cook much meat at home, but I will eat it on occasion or when eating out. For the amount of cycling and activity I do my body needs enough protein and iron, I wasn't getting that on an all veggie diet unfortunately. I'm still trying to control my dairy intake. Cheese is always my downfall, I love it waaay too much. Goat cheese is a little better because it is easier for humans to digest. Another favorite product Ezekiel 4:9 Bread on the expensive side, but very healthy (keep it in the fridge.) I feel a little lame that I didn't discover Nutella until I was an adult. I suspect we never had it as kids because it contains soy which my mom is allergic to. But now that I've had it, there's no going back. I read a recent article in the Huffington Post comparing Nutella against other hazelnut spreads. In a blind taste test it was number one by a landslide.
I think basil pesto is one of the most versatile ingredients in my arsenal. I love putting it on bread/toast for a stack. It's great on pasta, but I also love it with baked potatoes, over goat cheese with crackers and wine, or mixed in with brown rice.

This next week my two recipes will be Chicken Marsala and Smokey Mac n Cheese. Post will be forthcoming.
